Kabos is an idiomorphic settlement, which lies right next to Chora, known for its fragrant citrus fruits and its colorful mansion-houses. Behind the tall surrounding wall, each mansion-house has a garden- much bigger than the ordinary ones-where the famous citrus fruits of Chios are brought on. It usually has a large draw well, from which the gardens are watered, and, most of the times, there are hypaethral areas with alleys and fountains or basins. The Thymianian ashlar with its reddish colorations and the bold architectural compositions of the mansion-houses differentiate them from any other kind of building you have ever seen. The citrus fruits, especially the fantastic mandarins that have been exported all over the world, are responsible to a large extent not only for the prosperity of the island, but also for the heady fragrance hanging in the air during spring. The citrus fruits were brought to the island by the Franks, who built Kabos like that in the 12th century. Many mansion-houses were destroyed by an earthquake in 1881 and many of them are abandoned. However, some of the most well-preserved mansion-houses have become residencies or hotels.
