67km to the northwest of Alexandoupolis, at the central part of the prefecture of Evros, you will encounter Soufli. With a population of 4.258 inhabitants, the picturesque town of Soufli gained global reputation in the late 19^th century due to the unparalleled in quality silk that was produced here. The first seed of silk arrived in the area in 1839 and gradually more and more families were engaged in sericulture; the cultivation and processing of silkworm. The production of natural silk constituted for decades the basic sector of the local economy giving the town the nick name “The Silk Town”. Nowadays, this tradition is preserved by the locals, whereas the buildings’ architecture awakens nostalgic memories of another era. The town’s traditional houses, known as ‘cocoon houses’, made of wood and stone, built in ways that favor sericulture, constitute real ornaments. You will travel back in time with the impressive Tzivre Industry to the south of the town.
The area is remarkably interesting as far as nature is concerned, since within close distance, about 18km, one of the most important European biotopes, the Dadia Forest, is located  inhabited by rare species of raptors, some of which are endangered. During your visit in Soufli, wander around the streets of the town, admire the silk objects of virtue in the local shops and try the area’s cold cuts, the famous Soufli sausages and traditional ‘kavourmas’ (boiled meat pieces with their broth), which make up great delicacies for accompanying the local wine and ‘tsipouro’.
